Baked Stuffed Lobster Tails

So, we were originally going to go vegetarian tonight with just the couscous, but as I was picking up some ingredients at my local grocery store, I saw that they were having a post-Valentine’s Day sale on lobster tails. I had never prepared a lobster tail, but $10 was too good of a price to pass up, so I grabbed a package and headed home with them. Surprise! So, I looked for something simple to do and ended up modifying a quick recipe for baked lobster tails. My tails were pretty small, probably only 4 ounces each or so. So, if you have larger tails, you may want to increase the baking time. Here is the recipe:

Ingredients:

2 lobster tails, thawed
2 tablespoons unsalted butter, melted
1/2 cup bread crumbs
1 1/2 teaspoon mixed grill seasoning (my mixed grill seasoning has salt and pepper in it, so I added no additional salt or pepper, but add some in if your seasoning is lacking)

Directions:

  1. Preheat your oven to 450 degrees.
  2. Using kitchen scissors, remove the shell on the underside of the tails by cutting along the sides.
  3. In a small bowl, combine 1 tablespoon of the melted butter, the bread crumbs and grill seasoning. 
  4. Place the lobsters in a baking pan.
  5. Spoon the mixture over the lobster tails, and drizzle the remaining butter over the tails.
  6. Bake for 12 minutes or until the lobster meat is opaque and the crumbs are browned.
